Serves: 5 doz mini or 2 doz. regular
Ingredients
  • 1 C firmly packed brown sugar
  • 1½ C water
  • ⅓ C oil
  • 2 C raisins
  • 2 tsp cinnamon
  • ½ tsp cloves
  • ½ tsp nutmeg
  • *********************
  • 1 tsp soda
  • 1 tsp salt
  • 2 tsp water
  • *********************
  • 1 C white flour
  • 1 C whole wheat flour
  • 1 tsp baking powder
  • 1 C. chopped nuts (optional)
  • ¼ C. ground Chia seeds
Instructions
  1. Preheat oven to 325 F
  2. Combine the first group of ingredients in a large saucepan, bring to a boil and cook for 3 min. stirring constantly.
  3. Let cool for 10 min.
  4. Dissolve the soda and salt in the 2 tsp of water and stir into the raisin mixture (it will foam)
  5. Add the flours, baking powder and nuts, mix thoroughly and pour into greased muffin tins.
