Serves: 5 doz mini or 2 doz. regular
Ingredients
- 1 C firmly packed brown sugar
- 1½ C water
- ⅓ C oil
- 2 C raisins
- 2 tsp cinnamon
- ½ tsp cloves
- ½ tsp nutmeg

- 1 tsp soda
- 1 tsp salt
- 2 tsp water
- *********************
- 1 C white flour
- 1 C whole wheat flour
- 1 tsp baking powder
- 1 C. chopped nuts (optional)
- ¼ C. ground Chia seeds
Instructions
- Preheat oven to 325 F
- Combine the first group of ingredients in a large saucepan, bring to a boil and cook for 3 min. stirring constantly.
- Let cool for 10 min.
- Dissolve the soda and salt in the 2 tsp of water and stir into the raisin mixture (it will foam)
- Add the flours, baking powder and nuts, mix thoroughly and pour into greased muffin tins.
