Pico De Gallo is typically a raw salsa which changes its ingredients and seasonings both regionally and according to the cooks personal style. Pico De Gallo made with radishes are common along the Pacific Coast of Mexico.

Ingredients
  • ¼ C olive oil
  • 3 Tbsp lime juice
  • ½ tsp grated lime zest
  • 1 tsp kosher or sea salt (we use orsa salt)
  • 3 green onions, thinly sliced (1/2 C)
  • 1 jalapeno or serrano pepper finely chopped (add more if you like it hotter)
  • 2 T coarsely chopped mint leaves
  • 2 C radishes halved and thinly sliced
  • 2 - 4 baby cucumbers halved and thinly sliced (1 C)
Instructions
  1. Whisk together oil, lime juice and lime zest in bowl
  2. Stir in green onions, hot peppers and mint
  3. Fold in radishes and cucumbers
  4. Let stand 10 minutes before serving
