Grandma's Sweet Pickle Relish

This is a family favorite from Grandma.
Recipe type: Condiment
Serves: 6-8pint jars
  • 6 lbs. Cucumbers
  • ¾ lbs. onion
  • 6 Green peppers
  • 6 Red peppers
  • 1½ qt. vinegar
  • 3½ C sugar
  • ¼ C salt
  • 1½ tsp allspice
  • 1½ tsp cinnamon
  • 3 -4 tsp celery seed
  • ⅓ - ½ C mustard seed
  1. Wash veggies and put through a food grinder (med blade) drain and discard liquid.
  2. Put into a large kettle add 1 qt. of the vinegar, boil for 3 min. stirring often
  3. Drain and discard liquid.
  4. Return vegetables to the kettle add 1 pt. vinegar, sugar, salt, spices and simmer for 3 min.
  5. Keep simmering while packing hot jars & seal.
Be sure to jars are sterile, we like to wash them in the dishwasher and pack them while they are still hot. Have your lids soaking in hot water to help insure a good seal. Leave ⅓" to ½" space at the top of jar to insure a good seal, jars will not seal properly if there isn't sufficient air space or too much.
Space jars closely together somewhere where they will not get a draft on them and cover with a towel. Handle them as little as possible until they reach room temp. then check seals by gently tapping the lid to see if it feels solid. If it flexes when you tap on the lid it is not sealed and should either be refrigerated and used or reheated to a boil and go through the whole sealing process again with a new lid.
