While most tomato sauces get their kick from fresh garlic, this one substitutes fresh ginger for a similar punch that's a natural match for sweet, tender carrots. Ribbons of pappardelle pasta (one 8 oz. package) will turn this light sauce into a hearty meal.

Ingredients
  • 2 Tbs. olive oil
  • 4 large carrots (1lb) cut into matchsticks
  • 1¾ tsp fresh grated ginger
  • 1½ lbs fresh tomatoes peeled and crushed (well by hand)
  • ½ C loosely packed fresh basil leaves, divided
Instructions
  1. Heat oil in Dutch oven on medium high heat. Add carrots and season with salt, if desired. Cook 5 minutes, or until carrots are crisp tender and lightly browned, you'll need to stir them once or twice.
  2. Stir in the ginger then tomatoes and 3 large basil leaves.
  3. Bring to a simmer, reduce heat to medium low, and cook for 10 to 12 min. or until carrots are fork tender.
  4. Stir in the remaining basil leaves.
