Baby Kale and Spinach Bites

Serves: 18 servings
Ingredients
- 28 saltine crackers (crushed)
- 5 C mixed baby kale, swiss chard and spinach greens (washed and dried)
- ½ medium red pepper
- 1 can (8 oz.) sliced water chestnuts
- 2 T finely minced garlic
- 1½ C grated Parmesan cheese
- 3 egg whites
- canola oil for brushing stone
Instructions
- Place half of the greens in a food processor, process until finely chopped, transfer to batter bowl, repeat with remaining greens
- Cut bell pepper into small chunks, finely chop bell pepper and water chestnuts with food processor, add to batter bowl along with minced garlic
- Add 1¼ C grated Parmesan cheese to batter bowl, retaining ¼ C for topping
- In a separate bowl separate egg whites and reserve yolks for another use
- whisk egg whites until foamy add to batter bowl mix until thoroughly moistened
- Lightly brush large round baking stone with oil, with a small scoop (melon scoop) place one level scoop onto the stone, approximately 36 scoops total. sprinkle with reserved Parmesan
- Bake until golden brown
Notes
You may substitute baby spinach with mixed greens
