Tasty healthy little appetizers for your next get together
Recipe type: Appetizer
Serves: 18 servings
Ingredients
  • 28 saltine crackers (crushed)
  • 5 C mixed baby kale, swiss chard and spinach greens (washed and dried)
  • ½ medium red pepper
  • 1 can (8 oz.) sliced water chestnuts
  • 2 T finely minced garlic
  • 1½ C grated Parmesan cheese
  • 3 egg whites
  • canola oil for brushing stone
Instructions
  1. Place half of the greens in a food processor, process until finely chopped, transfer to batter bowl, repeat with remaining greens
  2. Cut bell pepper into small chunks, finely chop bell pepper and water chestnuts with food processor, add to batter bowl along with minced garlic
  3. Add 1¼ C grated Parmesan cheese to batter bowl, retaining ¼ C for topping
  4. In a separate bowl separate egg whites and reserve yolks for another use
  5. whisk egg whites until foamy add to batter bowl mix until thoroughly moistened
  6. Lightly brush large round baking stone with oil, with a small scoop (melon scoop) place one level scoop onto the stone, approximately 36 scoops total. sprinkle with reserved Parmesan
  7. Bake until golden brown
Notes
You may substitute baby spinach with mixed greens
